La Independencia
La Independencia is a 23-hectare tablon (block) inside the greater San Francisco farm. The block is located in a privileged area for coffee production, it sits at 1580 meters at the steps of the Salvadoran Santa Ana volcano, where the soils in which these coffees grow are rich in minerals. The block has been performing amazingly well over the years, providing us with top-quality coffee. This is not only due to the location, but also because of the good and innovative practices the Salaverrria family implemented when farming and processing their coffee.
They separate the cherries by days of picking and do different processes, fermentation, and drying techniques - depending on the capacity and potential of the lot. They also put special attention to managing drying times by building up layers and resting the coffees in piles.
The result? Sweet, delicate and classic Salvadoran coffees.
